Spicy Zucchini Nachos

HARVEST CREATIONS® Zucchini Coins spiced with TABASCO® brand Original Red Sauce flavor 24 ounces
Plum Tomatoes, diced 10 each
Red Onion, diced 1½ cups
Fresh Cilantro, chopped 1 cup
Small Jalapeño Peppers, veins and seeds removed, diced 3 each
Kosher Salt ¾ teaspoon
Black Pepper ½ teaspoon
Fresh Lime Juice ¼ cup
Shredded Pepper Jack Cheese 1½ cups
Cooked Black Beans, rinsed ½ cup
Method
  1. In a bowl, prepare pico de gallo: Combine tomatoes, onion, cilantro and jalapeño. Season to taste with salt, pepper and lime juice.
  2. Deep-fry zucchini coins at 350ºF for about 2 minutes or until golden brown.
  3. Top fried zucchini coins with pepper jack cheese and beans. Serve with pico de gallo.
